Creamy Tomato Basil Pasta
This is the pasta we make when the fridge is nearly empty and everyone is hungry. A handful of pantry staples turns into a rich, comforting sauce in the time it takes to boil the water.

- 400 g penne
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 400 g crushed tomatoes
- 120 ml cream
- 40 g grated parmesan
- Handful of fresh basil
- Salt and pepper
Method
- 1
Cook the penne in well-salted water until al dente. Reserve a cup of pasta water.
- 2
Warm the olive oil and gently cook the garlic for 1 minute.
- 3
Add the tomatoes and simmer for 8 minutes.
- 4
Stir in the cream and parmesan, then season.
- 5
Toss in the pasta with a splash of pasta water and finish with torn basil.
Cook's tips
- Use pasta water to loosen the sauce.
- Swap cream for mascarpone for an even richer sauce.
